Vegan vanilla sauce

Is there anyone who can resist the scent of vanilla? This simple and quick vegan vanilla sauce with soy milk is the perfect companion to warm apple strudels, crumbles, and other seasonal bakes. A comforting classic that's ready in just a few minutes.

Ingredients

  • 500 ml soy milk

  • 20 g cornstarch

  • 40 g sugar (I use homemade vanilla sugar)

  • 1 vanilla pod

 

Instructions

  1. Put the inside of a vanilla pod in a saucepan and save the pod

  2. Pour the soy milk into the pan

  3. Put the cornstarch in a bowl and spoon in approx. 8 tbsp of the soy milk and stir together

  4. Add the sugar and the vanilla pod to the pan

  5. Heat the pan over medium heat

  6. When the vanilla milk is hot and steaming (it must not boil), stir in the starch mixture with a whisk so that no lumps form

  7. Bring the mixture to the boil briefly. Then remove from the heat and leave to cool.
