Mini Apple Strudel (Apfelstrudel)
Apple strudel will always remind me of my childhood. This version of apple strudel is super quick and practical, perfect for a small vegan dessert and for storing. Strudel is an ancient dish that is known in many countries. It probably owes its name to its shape. Wrapped in a spiral, when sliced it is reminiscent of swirls of water or air.

Ingredients for 6 Mini Apple Strudel
About 1/3 filo pastry
250 g apples cut into cubes
Cinnamon-sugar mixture
Half a lemon
Melted butter for brushing the dough
Flaked almonds
Vegan vanilla sauce for serving
Instructions
Mix cinnamon and sugar in a small jar for even sprinkling
Chop apples in small cubes and sprinkle with a lemon juice
Melt butter and brush filo pastry lightly
Add a small amount of apple filling and sprinkle with cinnamon sugar
Fold in the sides, then roll the pastry into small strudels
Pierce the tops of the strudels lightly so they do not burst while baking
Bake in a non-preheated oven at 150°C for 12–15 minutes until lightly golden
Brush with more butter, sprinkle with flaked almonds, and bake until the almonds are lightly browned.
Served best with vegan vanilla sauce
