Soy Milk & Okara

A simple way to transform soybeans in only one step into fresh soy milk and protein-rich okara — a versatile ingredient used in dishes such as bolognese, nuggets, and many more recipes.

Ingredients

  • 200 g soybeans

  • 2 liters water

 

Instructions

  1. Soak the soybeans in water overnight or for at least 8 hours, then drain and rinse them thoroughly.

  2. Blend the soaked soybeans with 1 liter of water until the mixture is very smooth.

  3. Transfer the mixture to a large pot, let any foam settle slightly, and stir in the remaining 1 liter of water.

  4. Bring the mixture to a simmer and cook for at least 15 minutes, stirring occasionally.

  5. Strain the mixture through a cotton or linen cloth, nut milk bag, or fine sieve to separate the soy milk from the okara.
