Vegan Blue Cheese Apple Rose Pastry

A simple seasonal bake inspired by the arrival of apple season. With crisp apples, flaky pastry, and creamy vegan cheese, these delicate apple roses are perfect for celebrating the last warm days of summer.

Ingredients for 8 Apple Roses

  • approx. 2/3 of a packet of filo pastry

  • 60 g vegan blue cheese

  • 80-100 g vegan feta cheese or vegan crème fraîche (vegan feta softens when heated)

  • approx. 4-5 apples depending on size

  • half a lemon

  • a bowl with water

  • olive oil to coat and grease

  • salt, pepper or agave syrup to taste

 

Instructions

  1. Add juice from the lemon to the water bowl.

  2. Cut the apple slices as finely as possible and place into lemon water.

  3. Cut the filo pastry dough along the short side into strips about 8 - 10 cm wide.

  4. Grease muffin cups with olive oil

  5. Fold two pastry strips slightly offset and press them into muffin mold to look like outer petals of a flower.

  6. Add vegan blue cheese and vegan feta or crème fraîche to the molds.

  7. The apple slices can now be placed in the cheese with the skin facing upwards. The larger pieces should be on the outside, the smaller ones on the inside, to resemble a blossom.

  8. The pastry petals can now be greased and bent into shape.

  9. Bake in a non-preheated oven at 150 degrees Celsius until the pastry is lightly browned (for 12-15). Best served warm.
