Midnight Sun - Spinach and Vegan Cheese Stuffed Pastry

A shareable Midsummer centerpiece inspired by the midnight sun. This bread can be enjoyed both warm and cold, making it perfect for a Midsummer buffet or picnic.

Ingredients dough

  • 150 ml water

  • 300 g flour

  • 1 packet dry yeast

  • 1 tsp sugar

  • ½ tsp salt

  • 2–3 tbsp oil

Ingredients filling

  • 300 g fresh spinach or frozen spinach, thoroughly drained

  • 1 chickpea egg (1 tbsp chickpea flour mixed with 1 tbsp water)

  • 75 g vegan feta

  • 50 g vegan cream cheese

  • 75 g vegan mozzarella

  • Salt and pepper to taste

Ingredients finish

  • Plant-based milk, for brushing

  • Sesame seeds, for sprinkling

 

Instructions dough

  1. Knead together water, flour, yeast, sugar, salt and oil until a smooth dough forms.

  2. Leave the dough to rise for about 20 minutes or until doubled in size.

  3. If using fresh spinach, blend it with an immersion blender or another food processor until finely chopped.

  4. Mix together the spinach, chickpea egg and vegan cheeses.

  5. Season with salt and pepper.

  6. Blend or mix until the filling is firm and relatively dry.

  7. Roll out the dough into a circle.

  8. Use a cake tin, bowl or plate as a guide to create the sun shape. The bowl helps to separate the two sections while the inner circle remains intact.

  9. Fill the outer ring with the spinach mixture and shape the rays of the sun.

  10. Use any leftover dough to create small celestial decorations such as stars, moons or additional sun rays.

  11. Brush the dough with plant-based milk and sprinkle generously with sesame seeds.

  12. Bake at 180°C (356°F) until golden brown.
