Swedish Midsummer Cake (Midsommartårta)

With rhubarb compote, strawberries and whipped cream for Midsummer and warm sunny days.

Ingredients

Decoration

  • Fresh berries of your choice

  • Edible flowers

  • Lemon balm, mint or other fresh herbs

  • Seasonal fruits

 

Instructions

  1.  Cut a 1 cm deep rim around the edge of the cake base

  2. Cut through it with a piece of string. Cross the string over itself.

  3. Layer the rhubarb compote, strawberries and whipped cream onto the cake base.

  4. Decorate with seasonal berries, edible flowers and fresh herbs as desired.
