Apple Tarte Tatin
A classic French upside-down tart with caramelised apples and crisp shortcrust pastry.

Ingredients shortcrust pastry
400 g spelt flour
200 g cold vegan butter
a pinch of salt
120 ml cold water
Ingredients tomato filling
5–6 apples, depending on their size and your pan
100 g sugar
1–2 small flakes of vegan butter
1 tsp vanilla
Instructions
Combine the spelt flour, cold vegan butter and salt.
Add the cold water and knead into a dough.
Shape the dough into a ball, place a plate over the bowl and refrigerate.
Peel the apples, halve them and remove the cores.
Melt the sugar in an ovenproof pan until it turns into caramel.
Add the vegan butter and vanilla.
Arrange the apple halves in the caramel.
Roll out the pastry to the size of the pan and place it over the apples.
Tuck the pastry in around the sides so the filling stays inside.
Bake at 200°C (392°F) for about 35 minutes.
Once the tart is done, carefully place a plate over the pan and flip the tart onto it.
